Succulent Asian shrimp scampi with zesty ginger, garlic, lime, and soy sauce atop spaghetti for a speedy, gratifying dinner.
Ingredients:
  • 1 (8 ounce) package dry spaghetti
  • 2 tablespoons peanut oil
  • 16 jumbo shrimp, peeled and deveined
  • 0.5 cup dry sherry
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 teaspoon ginger paste
  • 0.5 cup chicken broth
  • 2 tablespoons reduced-sodium soy sauce
  • 1 tablespoon sriracha sauce
  • 1 tablespoon unsalted butter
  • 1 lime, juiced
  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds
Instructions:
  • 1. Boil a large saucepan of lightly salted water. Add spaghetti and cook, stirring occasionally, until pasta is tender yet firm to the bite, about 12 minutes.
  • Heat peanut oil in a large skillet over medium-high heat. Sear shrimp until beginning to firm up, approximately 2 minutes per side. Transfer shrimp to a plate.
  • In a skillet, combine sherry, sesame oil, garlic, and ginger paste. Cook until fragrant for about 2 minutes. Stir in broth, soy sauce, and sriracha and cook for another 4 minutes. Finally, add butter and allow it to melt for about 1 minute.
  • Add the shrimp back to the skillet and cook for 4 minutes. Take it off the heat and mix in the lime juice.
  • Divide cooked spaghetti among 4 serving dishes, top with sauce from the skillet, place 4 shrimp on each dish, and garnish with green onions and sesame seeds.
