Ramen Shrimp and Vegetables

Create a quick and delicious Asian-style shrimp and vegetable noodle dish in just 20 minutes.
Ingredients:
  • 1 lb uncooked peeled deveined medium shrimp, thawed if frozen and tails peeled
  • 2 cups water
  • 1 package (3 oz) Oriental-flavor ramen noodle soup mix
  • 1 bag (1 lb) fresh stir-fry vegetables
  • 1/4 cup stir-fry sauce
Instructions:
  • Preheat a 12-inch nonstick skillet over medium-high heat. Cook shrimp in the skillet for 2 to 4 minutes, stirring occasionally, until they turn pink and firm. Transfer the cooked shrimp from the skillet and keep them warm.
  • Boil water in skillet. Add noodles from soup mix, stir until slightly softened, then mix in vegetables.
  • Bring the mixture to a boil over high heat. Simmer for 4 to 6 minutes, stirring occasionally, until the veggies are tender-crisp. Add the seasoning packet and stir-fry sauce, then cook for 3 to 5 minutes, stirring often, until heated through. Finally, mix in the shrimp.
