Spicy Shrimp Ramen Noodles with Asparagus

Elevate instant ramen with succulent shrimp, crisp asparagus, and your own custom seasonings for a gourmet twist.
Ingredients:
  • 2 teaspoons sesame oil, divided
  • 8 ounces medium shrimp, peeled and deveined
  • 0.25 cup chopped carrot
  • 4 ounces button mushrooms, sliced
  • 4 cups vegetable broth
  • 1 tablespoon hoisin sauce
  • 1 tablespoon soy sauce
  • 2 teaspoons chile-garlic sauce (such as Sriracha®)
  • 5 fresh asparagus, trimmed and chopped
  • 2 (3 ounce) packages instant ramen noodles, flavor packet discarded
Instructions:
  • In a large soup pot over medium heat, sizzle 1 teaspoon of aromatic sesame oil, then sauté shrimp until vibrant pink, approximately 5 minutes. Plate the shrimp and set aside.
  • In a hot pan, sauté carrots and mushrooms in the last teaspoon of sesame oil until slightly tender, approximately 5 minutes. Add broth, hoisin, soy sauce, and chile-garlic sauce, then bring to a boil and simmer for 3 minutes.
  • After boiling asparagus and ramen noodles for 3 minutes, remove from heat. Gently fold shrimp back into the pot and allow to sit for 4 minutes.
  • Separate the mixture into two bowls and sprinkle with chopped green onions for a finishing touch.
