Spicy shrimp tacos with zesty tomatillo salsa and creamy avocado for a delicious and effortless meal.
Ingredients:
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 3 tablespoons olive oil, divided
  • 1 clove garlic, minced
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon cayenne pepper
  • 2 tablespoons lime juice
  • 16 (5 inch) corn tortillas
  • 2 cups tomatillo salsa
  • 1 avocado - peeled, pitted, and chopped
  • 0.5 cup sour cream
  • 2 tablespoons chopped fresh cilantro
Instructions:
  • In a bowl, mix shrimp, 1 tablespoon of olive oil, garlic, chili powder, salt, and cayenne pepper until fully coated. Refrigerate covered for 30 minutes.
  • In a skillet over medium-high heat, heat the remaining olive oil, then add the shrimp mixture. Cook until shrimp are pink and cooked through, for about 5 minutes. Finish by sprinkling with lime juice.
  • Warm tortillas on a dry skillet over medium-high heat for 10-15 seconds per side. Fill them with cooked shrimp, then top with tomatillo salsa, avocado, and sour cream. Garnish with chopped cilantro.
