Elevate summer with zesty grilled shrimp tacos marinated in spicy lime blend for a flavor explosion.
Ingredients:
  • 1.5 cups lime juice
  • 3 tablespoons olive oil
  • 2 tablespoons chili powder
  • 1 teaspoon mayonnaise
  • 3 pounds uncooked medium shrimp, peeled and deveined
  • 0.5 cup enchilada sauce
  • 0.5 (4 ounce) jar diced jalapeno peppers
  • 5 teaspoons honey
  • 3 teaspoons lime juice
  • salt to taste
  • 0.5 head red cabbage, shredded, or more to taste
  • 2 bunches scallions, chopped
  • 3 tablespoons white vinegar
  • 1 small bunch cilantro, chopped
  • 20 (8 inch) corn tortillas
Instructions:
  • Combine zesty lime juice, rich olive oil, flavorful chili powder, and creamy mayonnaise in a bowl. Toss in succulent shrimp and let it marinate for a minimum of 1 hour.
  • Combine enchilada sauce, jalapeños, honey, lime juice, and salt in a separate bowl to create a flavorful sauce.
  • Mix together cabbage, scallions, olive oil, vinegar, and cilantro in a large bowl to create a flavorful slaw.
  • Warm the tortillas in a skillet over medium-high heat for around 30 seconds on each side. Keep them warm.
  • Get your outdoor grill ready by preheating it to a medium heat and giving the grate a light oiling.
  • Take the shrimp out of the marinade and grill until they turn opaque, approximately 5 minutes. Place the shrimp on each tortilla and garnish with sauce and slaw.
