Indulge in homemade ramen with ginger, sesame, shrimp, scallops, and soft-boiled eggs.
Ingredients:
  • 8 cups water
  • 8 cloves garlic, peeled and whole
  • 8 slices fresh ginger root
  • 0.5 medium onion, halved and separated
  • 4 eggs
  • 1 pinch salt and freshly ground black pepper to taste
  • 0.5 cup soy sauce
  • 0.25 cup sake
  • 2 tablespoons Thai-style chile sauce
  • 2 teaspoons sesame oil
  • 2 tablespoons white sugar
  • 1.5 teaspoons salt
  • 15 ounces dried Japanese-style noodles
  • 12 large shrimp, shelled and deveined, at room temperature
  • 4 large dry sea scallops, halved, at room temperature
  • 1.5 cups fresh bean sprouts
  • 0.5 cup sliced scallions
Instructions:
  • In a large stock pot, unite water, garlic, ginger, and onion, then bring the flavorful broth to a gentle simmer. Keep simmering for 40 minutes on low heat.
  • While the broth simmers, prepare a saucepan of boiling water. Gently lower eggs into the water, one at a time, and cook for 7 minutes for a just-set yolk. Remove eggs from the hot water and immediately cool them under running cold water. Peel the eggs, cut them in half lengthwise, place on a plate, and season with salt and pepper.
  • In a large pot, bring water to a boil and then simmer for cooking the noodles.
  • After 40 minutes of simmering, fish out the garlic, ginger, and onion from the stock pot using a slotted spoon or strainer. Discard the vegetables. Stir in soy sauce, sake, chile sauce, sesame oil, sugar, and salt. Loosely cover the pot and simmer for an additional 10 to 20 minutes.
  • Bring your pot of simmering water to a vigorous boil. Add the noodles and bring back to a boil. Cook uncovered, stirring occasionally, until the noodles are al dente, around 1 to 3 minutes. Drain and distribute the noodles evenly among 4 large bowls.
  • Gently slip in the shrimp and scallops into the fragrant broth. Allow them to dance until they turn beautifully opaque, which should take about 3 to 5 minutes.
  • Pour the flavorful broth over the noodles in each bowl until they are just covered. Place an equal amount of shrimp and 1 scallop in the center of each bowl. Arrange a serving of bean sprouts to the side. Add 2 soft-boiled egg halves with yolks facing up on top of the noodles in each bowl, ensuring they stay above the broth. Sprinkle scallions over each bowl as a final touch.
