Enjoy trendy ramen bowl for dinner with chicken, bok choy, ginger, and a perfect seven-minute egg on top.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 0.5 cup rice vinegar, or to taste
  • 0.5 cup reduced-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons mirin
  • 1 tablespoon fish sauce
  • 1 tablespoon sriracha sauce
  • 4 cups low-sodium chicken broth
  • 0.75 pound baby bok choy, quartered lengthwise
  • 1 cooked chicken breasts, shredded
  • 3 (3 ounce) packages dried ramen noodles
  • 1 jalapeno pepper, sliced, or to taste
  • 2 green onions, chopped, or to taste
  • 0.25 cup chopped cilantro, or to taste
Instructions:
  • In a Dutch oven over medium-high heat, warm up 1 tablespoon of oil. Sauté the onion until starting to soften, approximately 5 minutes. Add garlic and ginger and cook for another 30 seconds. Pour in rice vinegar, soy sauce, oyster sauce, mirin, fish sauce, and Sriracha sauce; give it a good stir. Pour in the chicken broth and water, and bring it to a boil. Reduce the heat and let it simmer for about 5 minutes. Add bok choy and chicken, and gently simmer until the bok choy is just tender, around 2 minutes. Cover and keep warm before serving.
  • Fill a large pot with lightly salted water and bring it to a rolling boil. Add ramen noodles and cook until tender yet firm to the bite, about 5 to 7 minutes. Drain the noodles and drizzle with the remaining tablespoon of oil to prevent sticking.
  • While the ramen cooks, fill a pot with water to cover the eggs and bring to a boil. Carefully add the eggs and cook until yolks are just set, roughly 7 minutes.
  • Submerge cooked eggs in a large bowl of ice water for about 3 minutes to halt the cooking process. Gently remove shells and slice the eggs in half.
  • Portion the ramen evenly into four bowls. Pour in the flavorful broth before garnishing with spicy jalapeños, fresh green onions, fragrant cilantro, and perfectly soft boiled egg halves. Serve promptly to enjoy at its peak.
