Quick ramen soup with spicy chicken recipe

Make quick and delicious spicy chicken ramen at home for a taste of Japan in minutes.
Ingredients:
  • 2 Australian Chicken Breast Fillets
  • 20.00 ml sriracha or chilli sauce
  • 16.00 gm brown sugar
  • 2 spring onions, thinly sliced lengthways
  • 1l chicken
  • 500ml water
  • 180g soba noodles
  • 2 carrots, peeled, cut into matchsticks
  • 200g snow peas, thinly sliced lengthways
Instructions:
  • Preheat your oven to 180°C while lining a baking tray with parchment paper. In a large bowl, mix together the chicken, sriracha or chili sauce, and sugar until fully combined.
  • Preheat a medium frying pan over high heat. Sear chicken for 2 minutes on each side until golden brown. Then transfer to a lined tray and bake for 8 minutes or until fully cooked.
  • Place the spring onion in a bowl of ice water to make them curl beautifully. Let them sit for 10 minutes, then drain.
  • After soaking the spring onion, let's bring the broth and water to a boil in a large saucepan over high heat. Add noodles and cook for 2-3 minutes until tender. Then, remove the saucepan from the heat and stir in the carrot and snow peas.
  • Divide the noodle mixture into serving bowls and top with thickly sliced chicken. Sprinkle with spring onions to finish.
