Beefy Italian Ramen Skillet

Whip up a zesty stovetop dinner in just 30 minutes with quick-cooking ramen noodles.
Ingredients:
  • 2 packages (3 oz each) beef-flavor ramen noodle soup mix
  • 1 lb lean (at least 80%) ground beef
  • 24 slices pepperoni (1 to 1 1/4 inches in diameter)
  • 1 can (14.5 oz) diced tomatoes with basil, garlic and oregano, undrained
  • 1 cup water
  • 1 small green bell pepper, cut into 1/2-inch pieces (1/2 cup)
  • 1 cup shredded mozzarella cheese (4 oz)
Instructions:
  • Break noodles in half and set aside, keeping one seasoning packet and discarding the second packet. In a 10-inch skillet, cook beef and pepperoni over medium heat for 8 to 10 minutes, stirring occasionally, until beef is browned; then drain.
  • Combine the tomatoes, water, and reserved seasoning packet with the beef mixture and bring to a boil. Add in the noodles and bell pepper, then cook for 3 to 5 minutes, stirring occasionally, until the noodles are tender.
  • Sprinkle cheese around the edge of the skillet over the noodle mixture. Cover and allow it to sit for about 5 minutes until the cheese is melted.
