Elevated Italian beef carpaccio with a fusion of aromatic Asian spices.
Ingredients:
  • 250 g quality beef fillet approximately 12cm in length
  • 2 cups sushi rice
  • groundnut oil
  • aonori ko (dried seaweed) optional
  • 1 tablespoon sesame seeds toasted
  • 2 punnets interesting cress
  • 2 limes cut into wedges, to serve
  • 1 teaspoon hot chilli powder
  • 1 teaspoon sesame seeds toasted
  • 1 pinch poppy seeds
  • 1 pinch sea salt
  • 3 tablespoons tahini (sesame seed paste)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice wine vinegar or sushi vinegar
  • 1 teaspoon icing sugar
  • 1 lime
Instructions:
  • Cut the beef fillet in half lengthways, then roll each piece tightly in cling film and refrigerate overnight to firm it up. The next day, cook the rice as per packet instructions. Crush the spice mix ingredients in a pestle and mortar, then sprinkle and pat them onto the beef. Sear the beef in a hot pan with groundnut oil for 1 minute, turning until golden all over. Let it rest on a board. Mix tahini, soy, vinegar, icing sugar, lime juice, and water in a bowl. Serve sticky rice sprinkled with seaweed and sesame seeds, accompanied by the sauce. Slice the beef thinly and arrange on the board, garnish with cress and lime wedges.
