Elevate your cheeseburger with rare roast beef, sweet onion jam, and melted mozzarella.
Ingredients:
  • 2 garlic cloves, finely chopped
  • 1/2 tsp dried chilli flakes
  • 2 tsp thyme leaves
  • 60ml olive oil
  • 400g piece beef eye-fillet, trimmed
  • 4 roma tomatoes, halved
  • Onion jam (see notes), to serve
  • 4 crusty bread rolls, split, toasted
  • 500.00 ml rocket
  • 2 x 125g balls buffalo mozzarella (see notes) or bocconcini, torn
  • 150g aioli
  • 40g parmesan
Instructions:
  • Preheat the oven to 120°C. Mix garlic, chilli flakes, 1 teaspoon thyme, and 2 tablespoons of oil in a bowl, season with salt and pepper. Add beef, ensuring it is well coated, then let it marinate at room temperature for 1 hour.
  • Arrange tomatoes cut-side up on a baking tray and drizzle with the remaining 1 tablespoon of olive oil. Season with salt and pepper, then sprinkle with the remaining 1 teaspoon of thyme. Roast for 1 hour until tender, then allow to cool.
  • Preheat the oven to 200°C.
  • Preheat an ovenproof frypan over high heat. Brown beef on all sides for 3-4 minutes. Roast in the oven for 10-12 minutes until desired doneness. Let it rest covered with foil for 10 minutes, then slice thinly.
  • Spread the base of each roll with savory onion jam. Layer with tomato, beef, peppery rocket, and creamy mozzarella. Drizzle with flavorful aioli, sprinkle with parmesan, then cap with the bun top.
