Quick and budget-friendly pork mince ramen with flavourful broth using chicken noodle soup mix and caramelized pork mince for crispy umami goodness. Ingredients:
  • 500g pork mince
  • 3 garlic cloves, crushed
  • 42.00 gm soy sauce
  • 1 chicken stock cube, crumbled
  • 2 x 50g sachets Simply Chicken Noodle Flavoured Soup Mix
  • 3 tsp grated fresh ginger
  • 2 x 150g pkt shelf-fresh ramen noodles
  • 145g (1 cup) frozen corn kernels
  • 2 soft- or hard-boiled eggs, peeled, halved
  • 2 green shallots, thinly sliced diagonally
Instructions:
  • In a hot frying pan, crisp and brown the pork for 8-10 minutes while breaking up lumps. Stir in garlic and soy sauce for 1 minute until aromatic. Cover to keep warm.
  • In a large saucepan over high heat, combine stock cube, soup sachets, 2L (8 cups) water, and ginger. Bring to a boil while covered. Next, add noodles and corn, and cook for 3-4 minutes until both are tender.
  • Ladle soup into bowls and garnish with pork mixture, egg, and shallot before serving.
