Spicy pork noodle bowl recipe

Quick and flavorful noodle bowl with spicy pork mince and crispy peanuts, ready in just 20 minutes!
Ingredients:
  • 500g Pork Mince
  • 20.00 ml finely grated ginger
  • 60ml black bean sauce
  • 22.00 gm sweet chilli sauce
  • 2 spring onions, thinly sliced
  • 125.00 ml coarsely chopped coriander
  • 200g vermicelli rice noodles
  • 2 carrots, peeled, cut into long matchsticks
  • 2 Lebanese cucumbers, cut into long matchsticks
  • 125.00 ml coriander sprigs
  • 70g peanuts
Instructions:
  • 1. Preheat a large frying pan over high heat. Add the mince and cook, using a wooden spoon to break it up, for 5 minutes until browned. Stir in ginger, black bean or chili bean sauce, and sweet chili sauce. Cook for an additional 2-3 mins until heated through. Remove from heat and mix in spring onion and chopped coriander.
  • Place the noodles in a large heatproof bowl and cover with boiling water. Let them sit for 2 minutes until tender. Rinse with cold water and drain thoroughly.
  • Distribute noodles into serving bowls, then layer with mince mixture, carrot, and cucumber. Garnish with fresh coriander sprigs and peanuts.
