Spicy Tan Tan Soup (Tantanmen or Dan Dan Noodles)

Savory Chinese pork noodle soup with spicy chile kick.
Ingredients:
  • 1 teaspoon sesame oil
  • 2 teaspoons doubanjiang (soy bean paste)
  • 1 tablespoon minced shallots
  • 1 clove garlic, pressed
  • 1.5 teaspoons grated fresh ginger
  • 6 ounces ground pork
  • 0.25 cup soy sauce
  • 2 tablespoons tahini (sesame seed paste)
  • 1 tablespoon sake
  • 1 tablespoon miso paste
  • 1 teaspoon tianmianjiang (sweet bean paste)
  • 4 cups chicken stock
  • 2 teaspoons rice vinegar
  • 1 teaspoon rayu (chile oil)
  • 0.5 cup fresh spinach, or to taste
  • 2 cups ramen noodles, or to taste
  • 3 green onions, thinly sliced
  • 1 red Thai chile pepper, sliced
Instructions:
  • In a skillet over medium heat, warm up sesame oil then stir in doubanjiang. Sauté shallots, garlic, and ginger until aromatic, around 30 seconds. Add ground pork and cook until browned, approximately 3 minutes.
  • Combine soy sauce, tahini, sake, miso paste, and tianmianjiang with the pork mixture until well mixed. Pour in chicken stock and bring to a boil. Stir in rice vinegar and rayu, then add spinach. Let the soup simmer on low heat for 10 minutes.
  • Soak noodles in a bowl of hot water to loosen, then drain. Stir noodles into soup and top with fresh green onions and spicy Thai chile peppers for a flavorful finish.
