Spicy gochujang-marinated chicken cooked with veggies in a flavorful Korean stew.
Ingredients:
  • 0.25 cup soy sauce
  • 3 tablespoons gochujang (Korean hot pepper paste)
  • 1 tablespoon brown sugar
  • 1 tablespoon minced garlic
  • 2 teaspoons sesame oil
  • 1.5 teaspoons minced fresh ginger root
  • 0.5 teaspoon chile powder
  • 2 tablespoons vegetable oil, divided, or as needed
  • 2 skinless, boneless chicken breasts, cut into 1-inch cubes
  • 3 carrots, peeled and thickly sliced
  • 2 potatoes, peeled and diced
  • 1 leek, trimmed and thinly sliced
  • 1 small onion, cut into 8 wedges
  • 1 habanero pepper, seeded and minced
  • 2 cups water, or as needed
Instructions:
  • Mix together soy sauce, gochujang, brown sugar, garlic, sesame oil, ginger, and chile powder in a bowl to create the marinade.
  • In a stockpot over medium heat, warm up 1 tablespoon of vegetable oil. Cook the chicken until it achieves a nice even brown color, approximately 10 minutes. Then, transfer the chicken to a bowl with the marinade and mix well to coat.
  • Heat up the remaining vegetable oil in a stockpot. Add carrots, potatoes, leek, and onion. Sauté until the onion turns translucent, around 10 minutes. Mix in the habanero pepper and cook until fragrant, approximately 1 more minute.
  • In a stockpot, combine water, chicken, and marinade. Bring to a boil, then simmer over low heat, adding water as needed, until vegetables are tender, around 10 minutes.
