Grill halved dim sims for crispy perfection, a winning pork and prawn dish for weekend gatherings.
Ingredients:
  • 2 green shallots
  • 125g pork mince
  • 125g raw prawn meat, finely chopped
  • 50g purple wombok or green wombok (Chinese cabbage), finely chopped, plus 4-6 large leaves, extra, to serve
  • 3 (about 30g) water chestnuts, finely chopped
  • 10g dried shiitake mushrooms, soaked, finely chopped
  • 1 garlic clove, crushed
  • 1 tsp finely grated fresh ginger
  • 1/4 tsp Chinese five spice
  • 1/2 tsp sesame oil
  • 1 egg white
  • 10.00 gm cornflour
  • 20 egg wonton wrappers
  • 42.00 gm lemon juice
  • 21.00 gm soy sauce
  • 1 fresh small red chilli, deseeded, finely chopped
  • 2.50 gm caster sugar
Instructions:
  • Prepare the dipping sauce by mixing all ingredients together in a bowl. Let it sit until serving time to enhance the flavors.
  • Diagonally slice the green part of the shallots thinly, set aside. Finely chop the white part and place it in a large bowl.
  • Combine the pork, prawn, wombok, water chestnut, shiitake, garlic, ginger, five spice, and oil in a bowl, mixing well with your hands. In a separate small bowl, mix the egg white and cornflour, then add it to the mince mixture, stirring until fully combined.
  • Cut round discs from the wonton wrappers using a 7.5cm pastry cutter. Hold a wrapper in your hand, put 1 tablespoon of mince in the center, fold up to form a pouch, pinching the sides to enclose the filling, but leaving the top exposed. Repeat with the rest of the wrappers and mince.
  • Steam dim sims in batches for 5 minutes until just cooked. Allow to cool slightly.
  • Heat up a barbecue grill or chargrill pan on medium-high. Grill the extra wombok leaves for 1-2 minutes on each side until they get a slight char. Place them on serving plates. Cut the dim sims in half lengthwise, spray with oil, and grill, cut side down, for 1 minute. Flip them over and continue grilling for 1-2 minutes until lightly charred. Distribute the dim sims over the wombok leaves, sprinkle with the reserved green shallot, and serve with the dipping sauce.
