Barbecued Pork Tenderloin with Curried Toast

Spiced bread with savory pork and BBQ sauce, ideal for entertaining.
Ingredients:
  • 1/4 cup packed dark brown sugar
  • 2 teaspoons smoked Spanish paprika
  • 2 teaspoons ground allspice
  • 4 cloves garlic, finely chopped (2 teaspoons)
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 pork tenderloin (1 lb)
  • 2 teaspoons vegetable oil
  • 1/3 cup purchased barbecue sauce
  • 24 slices (1/2 inch thick) baguette French bread
  • 2 tablespoons butter or margarine, softened
  • 1/2 teaspoon curry powder
Instructions:
  • Combine brown sugar, paprika, allspice, garlic, pepper, and salt in a small bowl. Rub mixture over pork to coat, then tightly wrap in plastic wrap. Refrigerate for at least 4 hours, or up to 24 hours.
  • Take the pork out of the refrigerator and let it sit at room temperature for around 30 minutes.
  • Preheat oven to 450°F and generously spray the bottom of a roasting pan with cooking spray.
  • Heat oil in a large nonstick skillet over medium-high heat. Unwrap the pork and place it in the skillet. Cook for 3 minutes. Flip the pork and continue cooking for 2 to 3 minutes more until browned on all sides.
  • Place the pork in a greased roasting pan and bake in the oven uncovered for 15 to 20 minutes or until the pork is cooked through and reaches an internal temperature of 160°F. Remove from the oven and transfer the pork to a cutting board. Cover loosely with foil and let it rest for 10 minutes. Pour the pan drippings into a glass measuring cup and mix in the barbecue sauce.
  • Prepare a cookie sheet by lining it with foil. Arrange the bread slices on the foil-lined sheet and delicately spread butter on the top sides of the bread. Sprinkle with curry powder. Bake in the oven for 4 to 6 minutes or until the bread is crisp. Transfer the bread from the cookie sheet to a cooling rack.
  • Thinly slice the pork into 24 pieces and arrange them in a roasting pan in a single layer. Drizzle the pork with the barbecue sauce mixture and bake for an additional 5 minutes. Serve by placing a slice of pork on top of each piece of bread.
