Spicy Barbecued Pork Tenderloin with Green Beans

Spicy Asian sauce complements juicy pork tenderloin effortlessly.
Ingredients:
  • 1/3 cup stir-fry sauce
  • 1/3 cup regular (not spicy) barbecue sauce
  • 1/3 cup honey
  • 1/2 teaspoon crushed red pepper
  • 2 pork tenderloins (about 3/4 lb each)
  • 5 cups frozen whole green beans
  • 1/3 cup sliced almonds
Instructions:
  • Preheat oven to 450°F. Line a shallow roasting pan with foil. In a small bowl, thoroughly combine stir-fry sauce, barbecue sauce, honey, and crushed red pepper. Set aside 1/2 cup of the sauce for serving.
  • Place the pork in a pan, ensuring the small ends are tucked under for even cooking. Insert a meat thermometer into the thickest part of the pork. Brush the pork with approximately 1/4 cup of the remaining sauce.
  • After baking the dish uncovered for 15 minutes, take it out of the oven. Place green beans around the pork and drizzle them with sauce. Sprinkle the beans with almonds and bake for another 10 to 15 minutes, brushing the pork occasionally with drippings. Cook until the thermometer reads 155°F and the beans are almost tender. Cover the pork with foil and let it rest for 10 to 15 minutes until the thermometer reaches 160°F (the temperature will rise about 5°F more). This resting period will make the pork easier to slice.
  • Serve the pork alongside green beans and drizzle with the reserved 1/2 cup sauce.
