Asian sticky sweet pork coated in a sugary, spicy glaze.
Ingredients:
  • 1.25kg pork rashers, cut into 1cm-thick slices
  • 125ml (1/2 cup) soy sauce
  • 60ml (1/4 cup) barbecue sauce
  • 80g (1/2 cup, lightly packed) brown sugar
  • 60ml (1/4 cup) rice wine vinegar
  • 2 garlic cloves, finely chopped
  • 2 tsp grated fresh ginger
  • 1 tsp mustard powder
  • 1/2 tsp dried chilli flakes
  • Steamed rice, to serve
  • 3 shallots, trimmed, cut into matchsticks
  • 1 small carrot, peeled, cut into matchsticks
Instructions:
  • Place the pork in a zip-top plastic bag and add the sauces, sugar, vinegar, garlic, ginger, mustard powder, and chili. Massage the bag to ensure the marinade coats the pork evenly. Refrigerate for at least 4 hours or preferably overnight to marinate.
  • Preheat barbecue grill or chargrill to medium-high. Drain pork and grill for 3 minutes on each side or until fully cooked. Place on a platter and serve with rice, shallot, and carrot.
