Marinate pork belly in a soy sauce mixture, broil until dark and glossy for Chinese char siu.
Ingredients:
  • 2 tablespoons honey
  • 2 tablespoons Shaoxing cooking wine
  • 1 tablespoon hoisin sauce
  • 1 tablespoon pureed kiwi
  • 1 tablespoon Chinese dark soy sauce
  • 1 tablespoon Thai chile sauce
  • 2 cloves garlic, grated
  • 2 teaspoons oyster sauce
  • 0.5 teaspoon Chinese five-spice powder
  • 1.5 pounds pork belly, skin removed
Instructions:
  • Combine honey, cooking wine, hoisin sauce, kiwi, dark soy sauce, chile sauce, garlic, oyster sauce, and five-spice powder in a large resealable plastic bag. Add pork belly and seal the bag, removing any excess air.
  • Place the bag of marinated pork belly on a plate in the refrigerator, remembering to flip it occasionally, for a minimum of 2 days.
  • Preheat the oven to 275 degrees F (135 degrees C) with a wire rack set on a rimmed baking sheet in the upper third of the oven.
  • Lay the pork belly on the wire rack and set aside the marinade.
  • Roast the pork belly in the preheated oven until it reaches an internal temperature of 160 degrees F (71 degrees C, around 1 hour. Once done, take it out and brush it with the reserved marinade.
  • Position oven rack at the top and preheat broiler.
  • Broil pork until beautifully dark and glossy with lightly blackened edges, about 5 minutes. Flip and generously baste the second side. Broil until the second side matches the first in color, about 5 more minutes. Slice using a sharp knife.
