Marinate pork and serve with sweet, tangy satay sauce - a flavorful blend of sugar, tamarind, and peanuts.
Ingredients:
  • 45g (1/4 cup, lightly packed) brown sugar
  • 60ml (1/4 cup) water
  • 40.00 ml tamarind puree
  • 42.00 gm light soy sauce
  • 2.50 gm ground cumin
  • 800g pork fillet, cut into 2cm pieces
  • Light olive oil spray
  • 125g roasted peanuts
  • 9.20 gm peanut oil
  • 1 small brown onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 lemon grass stem, pale section only, finely chopped
  • 1.25 gm ground cumin
  • 1/2 tsp ground coriander
  • 125ml (1/2 cup) water
  • 5.30 gm dark soy sauce
  • 2 tsp tamarind puree
  • 8.00 gm brown sugar
  • 60ml (1/4 cup) water, extra
Instructions:
  • In a glass or ceramic bowl, mix together sugar, water, tamarind, light soy sauce, cumin, and pork. Cover with plastic wrap and refrigerate for 4 hours to allow flavors to meld.
  • For the sate sauce, finely chop the peanuts in a food processor. In a saucepan over medium heat, sauté the onion until golden, then add garlic and lemon grass. Mix in the chopped peanuts with cumin and coriander. Pour in water and dark soy sauce, simmer gently for 15 minutes until thickened. Finish by stirring in tamarind and sugar.
  • Skewer the pork and generously coat it with oil. Grill on medium-high heat, turning occasionally, until the pork is golden and cooked through, about 5 minutes.
  • Heat the sate sauce over medium heat until warmed. Mix in the additional water and serve with the skewers.
