Elevate your tofu game with a zesty marinade of ginger, garlic, curry, turmeric, fish sauce, lime juice, brown sugar, and sriracha for a delicious twist on classic satay.
Ingredients:
  • 1 (14-ounce) block extra-firm tofu
  • 1-inch piece fresh ginger, grated on a microplane or minced
  • 2 large cloves garlic, grated on a microplane or minced
  • 1 1/2 teaspoons yellow curry powder
  • 1 teaspoon ground turmeric
  • 1 tablespoon fish sauce
  • 1 1/2 tablespoons lime juice
  • 2 tablespoons packed brown sugar
  • 2 teaspoons sriracha
  • 1 tablespoon toasted sesame oil
  • 1/4 cup creamy peanut butter
  • 1/4 cup coconut milk
  • Salt, to taste
  • Vegetable oil, for the grill
  • 2 tablespoons roughly chopped cilantro (optional)

  • 20 (10-inch) bamboo skewers
Instructions:
  • Prepare the bamboo skewers: Begin soaking them in water as you get the tofu and peanut sauce ready.
  • Prepare the tofu: Drain the tofu and cut it into 10 slices (⅓-inch thick) along the shortest edge to resemble decks of cards. Cut each slice in half to make narrow strips. Place the tofu between paper towels and press to remove any excess liquid. Arrange tofu strips in an 8x8-inch baking pan.
  • Prepare the flavorful marinade by whisking together ginger, garlic, curry powder, turmeric, fish sauce, lime juice, brown sugar, and sriracha in a small bowl until smooth. Transfer half of the marinade into another bowl for making the sauce later on.
  • Combine the sesame oil with the marinade in a small bowl. Drizzle the mixture over the tofu, ensuring all sides are evenly coated by flipping the tofu strips.
  • Once the tofu is marinating, prepare the peanut sauce: Combine peanut butter and coconut milk with the reserved marinade in a medium bowl. Whisk until the mixture is smooth. For extra spice, add an additional 1/2 teaspoon or more of sriracha to taste.
  • Prepare the grill: Clean the grill. For charcoal grills, light coals until covered in ash and spread them out. For gas grills, ignite and set to medium heat. Preheat with closed lid for 10 minutes, aiming for 350 to 400° F.
  • Skewer tofu slices and season: Thread tofu slices onto skewers, making sure to season all sides with salt to taste while the grill heats up.
  • Prepare the grill grates: Right before placing the skewers on the grill, coat the grates with vegetable oil using metal tongs or a paper towel soaked in oil.
  • Grill the tofu skewers until they show distinct grill marks and can be easily lifted off the grate, about 5 minutes. Flip them with a metal spatula if needed and continue grilling for another 4 to 5 minutes until well-marked and easy to lift.
  • Plate the skewers on a platter, embellish with cilantro for extra flavor, and enjoy with the peanut sauce.
