Simple and tasty tofu sandwich on homemade pita with tahini, mustard, and broiled tomato.
Ingredients:
  • 2 pita bread rounds
  • 3 tablespoons mayonnaise
  • 3 tablespoons tahini (sesame-seed paste)
  • 1 tomato, sliced
  • 1 pinch salt
  • 4 slices firm tofu
  • 1 dash soy sauce
Instructions:
  • Turn on your oven's broiler.
  • Cut the pita rounds in half to create 4 round pieces. Spread mayonnaise on one half and tahini on the other. Add tomato slices with a pinch of salt on the mayo side, and place 2 slices of tofu with a drizzle of soy sauce on the tahini side. Arrange the open sandwiches on a large baking sheet.
  • Place in the oven and broil until hot and bread is lightly toasted, approximately 4 minutes. Fold the sandwiches in half and cut into wedges before serving.
