Flavorful vegetarian rice bowl with grilled veggies, teriyaki tofu, and pineapple.
Ingredients:
  • 1 (16 ounce) package extra firm tofu, drained and pressed
  • 0.66666668653488 cup teriyaki sauce, divided
  • 1 large red bell pepper
  • 2 small zucchini
  • 0.5 fresh pineapple, peeled and cored
  • 1 large onion
  • 0.25 cup olive oil
  • 2 cups hot cooked rice
  • 1 tablespoon sesame seeds
Instructions:
  • Cut tofu into 4 generous slices. Let it soak up the flavors of 1/3 cup of teriyaki sauce while you get the veggies ready.
  • Prepare the bell pepper, zucchini, pineapple, and onion by cutting them into wedges or quarters, removing seeds or cores as needed. Arrange them on a platter and brush with olive oil before seasoning with salt and pepper.
  • Prepare the grill by heating it to a medium-high temperature and lightly oil the grate.
  • Grill onions for 4 minutes, flipping once. Next, add bell pepper, zucchini, and pineapple to the grill. Continue grilling, turning occasionally, until cooked to your preference, for about 8 to 10 minutes. Transfer each item to a platter as they finish cooking, then chop into bite-sized pieces once they have cooled slightly.
  • Take the tofu out of the marinade and grill on a lightly oiled grate for 2 to 3 minutes on each side.
  • Spoon hot rice into 4 bowls. Layer with grilled vegetables, pineapple, and tofu. Drizzle each bowl with the remaining 1/3 cup teriyaki sauce, sprinkle with sesame seeds, and serve.
