Grilled tofu with peanut sauce and Asian greens

Veggie-packed stir-fry - quick and perfect for a busy weeknight!
Ingredients:
  • 18.40 gm vegetable oil
  • 5.00 gm curry powder
  • 95g peanut butter
  • 44.00 gm sweet chilli sauce
  • 165ml can coconut cream
  • 10.60 gm soy sauce
  • 500g hard tofu
  • 1 bunch choy sum
  • 1 small red capsicum, thinly sliced
  • 125.00 ml fresh coriander leaves
  • Steamed white rice or Asian noodles, to serve
Instructions:
  • In a small saucepan over medium heat, warm half of the oil. Stir in curry powder until fragrant. Add peanut butter, sweet chili sauce, coconut cream, and soy sauce, stirring until heated through. Set aside to keep warm.
  • Pat dry the drained tofu with absorbent paper. Cut into 8 thick slices. Brush each slice on both sides with the remaining oil. Grill on a heated grill plate until browned and heated through.
  • While the tofu is cooking, quickly steam or stir-fry the choy sum until tender. Serve the tofu with the choy sum, generously drizzle with peanut sauce, top with capsicum, and sprinkle with fresh coriander.
