Coconut soy chicken pasta skillet - Ready in 35 minutes!
Ingredients:
  • 12 oz. uncooked linguine
  • 1 teaspoon curry powder
  • 1/2 teaspoon salt
  • 1 1/2 lb. chicken breast strips for stir-frying
  • 2 tablespoons oil
  • 1 cup chopped onions
  • 2 garlic cloves, minced
  • 1 (14-oz.) can coconut milk
  • 1/4 cup lime juice
  • 2 tablespoons brown sugar
  • 3 tablespoons soy sauce
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup extra-crunchy peanut butter
  • 2 tablespoons chopped fresh cilantro, if desired
Instructions:
  • Cook linguine according to package instructions until perfectly cooked. Drain and cover to maintain warmth.
  • In a small bowl, mix curry powder and salt until combined. Place chicken strips in a medium bowl and toss with the curry mixture until evenly coated. Set aside.
  • In a large skillet, heat oil over medium heat until shimmering. Saute onions for 3-4 minutes until softened, stirring often. Add garlic and stir well. Cook chicken for 5-7 minutes until no longer pink in the center. Transfer chicken mixture to a plate.
  • Combine coconut milk, lime juice, brown sugar, soy sauce, and pepper flakes in the same skillet. Bring to a gentle boil. Stir in peanut butter until smooth. Increase heat to high and cook for 6 to 8 minutes until thickened, stirring constantly. Add the chicken mixture and cook for 1 to 2 minutes until heated through.
  • Place the cooked linguine elegantly on a serving platter. Spoon the delicious chicken mixture over the pasta. Finish with a sprinkle of fresh cilantro.
