Lime and ginger beer pork skewers

Marinate pork skewers overnight for juicier kebabs the next day.
Ingredients:
  • 4cm piece fresh ginger, peeled, finely chopped
  • 6 garlic cloves, finely chopped
  • 125.00 ml ginger beer
  • 131.25 gm soy sauce
  • 130.00 gm tomato sauce
  • 45.00 gm firmly packed brown sugar
  • 86.63 gm lime juice
  • 1.2 kg pork spare rib rashers, rind removed, cut into 3cm pieces
  • Rice bran oil cooking spray
Instructions:
  • In a large ceramic or glass bowl, combine ginger and garlic. Mix in ginger beer, soy sauce, tomato sauce, brown sugar, lime juice, and a generous amount of pepper. Add pork and coat well. Cover and refrigerate for at least 8 hours, preferably overnight.
  • Preheat your barbecue chargrill to a medium heat. Skewer the pork, saving the marinade. Spritz the skewers with oil. Grill the skewers, rotating and basting with marinade, for 8 to 10 minutes until pork is fully cooked. Enjoy!
