Asian-inspired mocktail for elegant dinner parties or a refreshing sip for summer gatherings.
Ingredients:
  • 215.00 gm caster sugar
  • 2 stalks lemongrass, trimmed
  • 86.63 gm lime juice
  • 189.38 gm coconut water, chilled
  • 1 litre ginger beer
  • 1000.00 ml ice, crushed
  • 8 sprigs fresh mint
Instructions:
  • In a small saucepan, combine sugar and 1 1/2 cups of water over medium-high heat. Stir continuously for 5 minutes until the sugar is completely dissolved.
  • Cut each lemongrass stalk into 4 long pieces and add to a saucepan. Bring to a boil, then simmer without stirring for 8 to 10 minutes until the mixture slightly thickens. Remove from heat and let it cool completely.
  • In a jug, mix lime juice, chilled sugar syrup infused with lemongrass, coconut water, and ginger beer. Place ice in serving glasses, add a mint sprig to each glass, then pour the lemongrass mixture over the ice. Stir thoroughly and serve promptly.
