Elevate instant ramen with homemade rotisserie chicken soup.
Ingredients:
  • 1 tablespoon olive oil, or as needed
  • 4 stalks celery, diced
  • 4 medium carrots, peeled and chopped
  • salt and ground black pepper to taste
  • 5 cloves garlic, minced
  • 0.5 teaspoon ginger paste
  • 10 cups chicken stock
  • 1 whole cooked rotisserie chicken - skinned, boned, and meat shredded
  • 1 tablespoon soy sauce
  • 3 (3 ounce) packages ramen noodles (flavor packets discarded)
Instructions:
  • In a soup pot over medium heat, warm oil. Add celery, carrots, salt, and pepper. Cook until soft, around 10 minutes. Stir in garlic and ginger paste and cook for 1 minute. Pour in chicken stock and bring to a boil.
  • Simmer chicken in rich soy sauce for one hour.
  • 1. Boil a large pot of water, then add the ramen noodles. Cook for 2 to 3 minutes until tender but slightly firm. Drain well.
  • Pour the flavorful chicken soup over the piping hot ramen in each bowl before serving.
