Southern Shrimp Ramen with a twist: ginger, lemongrass, and collard greens for a soulful fusion.
Ingredients:
  • 2 tablespoons grapeseed oil
  • 1/2 yellow onion, chopped
  • 1 carrot, cut into matchsticks
  • 1 tablespoon chopped fresh ginger
  • 1 tablespoon chopped fresh lemongrass or lemongrass powder
  • 1 tablespoon chopped fresh garlic
  • 4 to 6 fresh collard green leaves, chopped
  • 6 cups vegetable broth
  • 1/3 cup soy sauce
  • 1/3 cup fish sauce
  • 2 packages ramen, seasoning packet discarded
  • 1 pound raw shrimp, peeled and deveined
  • 1/2 cup sliced mushrooms
  • salt and freshly ground black pepper to taste
Instructions:
  • In a Dutch oven over medium heat, warm oil and sauté a mix of onions, carrots, ginger, lemongrass, and garlic for 3 to 5 minutes. Add chopped collard greens and sauté for another 3 to 5 minutes.
  • Combine vegetable broth, soy sauce, and fish sauce in a pot. Bring to a gentle simmer over medium heat and cook for 10-12 minutes.
  • Place the ramen noodles in boiling water and cook for 3 minutes. Remove the pot from the heat, then stir in the shrimp and mushrooms, covering the pot. Let the residual heat from the broth cook the shrimp until they turn pink and opaque, which should take about 5 to 7 minutes. Finally, season with salt and pepper to taste.
