Elevate shrimp and cheesy grits with gourmet dry sherry and tangy goat cheese for a special meal or fancy brunch.
Ingredients:
  • 3.5 cups water
  • 1 cup quick-cooking grits
  • 3 ounces farmers cheese
  • 2 ounces goat cheese
  • 1 slice American cheese
  • 2 teaspoons vegetable oil
  • 1 large tomato, diced
  • 2 green onions, sliced
  • 1 teaspoon bacon drippings, or to taste
  • 1 pound fresh shrimp - peeled, deveined, and tails removed
  • 0.25 cup half-and-half, or more to taste
  • 1 tablespoon dry sherry
  • 1 green onion (green tops only), sliced
Instructions:
  • In a large saucepan, bring water to a boil. Slowly whisk in grits and simmer over medium-low heat until thickened and tender, about 5 to 7 minutes, stirring occasionally. Add farmers cheese, goat cheese, and American cheese to the grits, stirring until melted. Keep the grits warm until ready to serve.
  • In a large skillet over medium heat, melt butter with vegetable oil. Add tomato, 2 green onions, and garlic, cook and stir until vegetables are tender, about 5 to 7 minutes. Stir in bacon drippings. Add shrimp and continue cooking until bright pink, about 5 minutes. Season with salt and black pepper to taste.
  • Blend the grits into the shrimp mixture, then stir in the half-and-half until smooth. Simmer for about 5 minutes to meld flavors, then add the sherry. Let it simmer for an additional 3 minutes before adjusting the seasoning with salt and black pepper. Serve garnished with sliced green tops of 1 green onion.
