Treat your guests to a luxurious seafood mac and cheese with shrimp, lobster, creamy sauce, and savory cracker topping.
Ingredients:
  • 1 (16 ounce) package whole wheat elbow macaroni
  • 0.5 cup dried minced onion
  • 1 pound cooked and cubed lobster meat
  • 1 pound cooked shrimp, tails removed
  • 1 (12 ounce) can evaporated milk
  • 1 cup heavy cream
  • 1 tablespoon all-purpose flour, sifted
  • 1 stick butter
  • 2 tablespoons all-purpose flour
  • 1 pound shredded sharp Cheddar cheese
  • 1 pound shredded Swiss cheese
  • 1 pound shredded Monterey Jack cheese
  • 1 tablespoon dried onion seasoning (such as Pampered Chef® Three Onion Rub)
  • 1 teaspoon herbes de Provence
  • 2 cups crushed buttery round crackers (such as Ritz®)
  • 1 stick butter, sliced into pats
Instructions:
  • 1. Boil a pot of lightly salted water. Add elbow macaroni and 1/2 cup of dried onion. Cook until macaroni is al dente, about 8 minutes. Drain well.
  • Drain pasta and onions over lobster and shrimp in a colander.
  • Preheat your oven to 375°F (190°C).
  • In a medium bowl, whisk eggs and set aside. Gently warm evaporated milk and cream in a saucepan over medium-low heat. Whisk in flour and cook until small bubbles form. Gradually add 1/4 cup of sauce at a time to the egg mixture, stirring to avoid scrambling the eggs. Pour the egg-cream mixture back into the pan slowly. Cook on medium-low heat, stirring occasionally, until thick and smooth, 5 to 10 minutes.
  • In the pot where the pasta cooked, melt 1 stick of butter over medium heat. Sprinkle in flour and cook until it thickens and becomes caramel-colored, around 5 minutes. Add Cheddar, Swiss, and Monterey Jack cheeses, stirring until mostly melted, about 4 minutes. Pour in cream sauce and stir until smooth.
  • Mix the pasta, lobster, and shrimp in the creamy cheese sauce until everything is well coated, then transfer the mixture into a 9x11-inch baking dish.
  • In the same saucepan used for the sauce, melt one more stick of butter. Stir in onion seasoning and herbes de Provence. Add crackers and cook over medium heat, stirring constantly until the mixture is lightly toasted, about 5 minutes.
  • Place thin slices of butter evenly over the macaroni mixture, then sprinkle the cracker coating on top.
  • Bake until the top is crispy and the cheeses are melted, usually around 1 hour in a preheated oven.
