Irresistible spicy fried chicken with a peppery buttermilk crust. A guaranteed crowd-pleaser!
Ingredients:
  • 1 (3 pound) whole chicken, cut into 10 pieces
  • 1 quart buttermilk
  • 2 tablespoons hot pepper sauce
  • 1 teaspoon cayenne pepper
  • 1 tablespoon cayenne pepper
  • 2 teaspoons garlic powder
  • vegetable oil for deep frying
Instructions:
  • Season chicken pieces generously with salt and pepper, then transfer them to a deep-sided baking dish.
  • In a large bowl, combine buttermilk, hot pepper sauce, and 1 teaspoon of cayenne pepper. Pour the mixture over the chicken, ensuring all sides are coated. Cover with plastic wrap and marinate in the refrigerator for approximately 2 hours.
  • Take chicken out of the buttermilk mixture, shaking off any extra liquid. Dispose of the rest of the buttermilk mixture.
  • In a large resealable plastic bag, combine flour, 1 tablespoon cayenne pepper, garlic powder, paprika, salt, and pepper. Add chicken pieces 2-3 at a time, seal the bag, and shake until chicken is evenly coated with seasoned flour.
  • Begin by gently warming the oil in a deep fryer or large saucepan until it reaches 350 degrees F (175 degrees C).
  • Carefully submerge chicken pieces into the sizzling oil and fry until golden brown and cooked through: approximately 8-10 minutes for breasts and wings, and 13-15 minutes for thighs and drumsticks. Ensure a minimum internal temperature of 165°F (74°C) is reached when checked with an instant-read thermometer. Afterwards, place the fried chicken on paper towels to remove excess oil.
