Indulge in Southern comfort with crispy buttermilk fried chicken on ciabatta buns, paired with zesty slaw.
Ingredients:
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 4 to 5 teaspoons Sriracha sauce
  • 1 cup thinly sliced green cabbage
  • 1 cup thinly sliced red cabbage
  • 1 tablespoon finely chopped red onion
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 4 burger buns or ciabatta rolls, split, toasted
Instructions:
  • Combine mayonnaise, sour cream, and Sriracha in a medium bowl until fully combined. Reserve 1/4 cup of the mixture in a small bowl and refrigerate. Add cabbage and onion to the remaining mixture in the bowl, toss to coat, and refrigerate.
  • Use a meat mallet to gently pound each chicken breast to an even 1/2 inch thickness. In a shallow dish, combine flour, salt, pepper, and paprika. Pour buttermilk into a separate shallow dish. Dredge the chicken in the flour mixture, then dip it in the buttermilk, and coat it once more in the flour mixture.
  • Heat 1/2 inch of oil in a 10-inch skillet over medium-high heat. Cook chicken for 6 to 8 minutes, flipping once, until the center is no longer pink and the coating is golden brown.
  • Spread the cut sides of the buns with the delicious mayonnaise mixture. Place 1 chicken breast on each bun bottom and top with the flavorful spicy slaw before covering with the bun tops.
