Southern fried chicken recipe

Make delicious spicy fried chicken with maximum flavor and crispy crunch.
Ingredients:
  • 2 x 1kg whole chickens
  • 375ml (11⁄2 cups) buttermilk
  • 180g (2 cups) dried (packaged) breadcrumbs
  • 115g (3/4 cup) plain flour
  • 25.00 gm cajun seasoning (store-bought or mix up your own blend, see notes)
  • 5.00 gm paprika
  • Canola oil, to deep-fry
Instructions:
  • Cut the chicken into 8 pieces.
  • In a large bowl, gently mix the chicken with buttermilk. Chill in the fridge for at least 6 hours, or preferably overnight, to marinate.
  • Mix the breadcrumbs, flour, seasoning, and paprika in a spacious dish or a sealable bag.
  • Pat dry the chicken, removing excess buttermilk. Coat each piece of chicken in the breadcrumb mixture and place on a large plate. Chill in the fridge for 30 minutes before cooking.
  • Preheat oil in an electric deep-fryer or large saucepan to 180C. Deep-fry chicken in 4 batches for 2-3 minutes until crispy and golden. Drain on paper towels.
  • Preheat the oven to 160C/140C fan forced. Place the fried chicken on 2 wire racks over roasting pans or baking trays. Bake for 25 minutes or until the chicken is fully cooked.
