Spicy fried chicken with hot sauce in buttermilk marinade and cayenne in breading.
Ingredients:
  • For the chicken:
  • 2 cups buttermilk
  • 1/2 cup hot sauce
  • 3 1/2 pounds bone-in, skin-on chicken parts
  • For the batter:
  • 1 tablespoon ground black pepper
  • 1 tablespoon cayenne pepper
  • 2 teaspoons kosher salt
  • For frying:
  • Canola, vegetable, or peanut oil
Instructions:
  • In a large bowl, combine buttermilk, hot sauce, salt, black pepper, cayenne, and garlic powder. Add chicken, ensuring it's entirely coated. Refrigerate and marinate for at least 8 hours, up to 24 hours.
  • Prepare the chicken: Take the chicken out of the refrigerator. In a large sturdy paper or plastic bag, combine flour, black pepper, cayenne, salt, and garlic powder. Add a few pieces of chicken at a time to the seasoned flour mixture in the bag, shake well to coat evenly. Remove chicken, shake off excess flour, and let rest on a platter at room temperature for 20 to 30 minutes.
  • Heat oil in a heavy skillet until it reaches 325°F. Be sure to use a sturdy pan like cast iron, stainless steel, or anodized aluminum. Keep a lid nearby for safety.
  • Achieve a crispy golden exterior for the chicken by gently placing the pieces into the sizzling oil, ensuring an even cooking process for approximately 8 to 10 minutes per side. Use tongs to flip the chicken intermittently until a digital thermometer reads 165°F at the thickest part, indicating a perfectly cooked dish.
