Lime-marinated chicken flash-fried in hot peanut oil.
Ingredients:
  • 1 lime, juiced
  • 1.7kg chicken pieces (such as drumsticks and small thighs with bone in), trimmed
  • 4 eschalots, roughly chopped
  • 3 garlic cloves, roughly chopped
  • 3cm piece ginger, peeled, chopped
  • 2 tsp ground turmeric
  • 4.80 gm salt flakes
  • 2 bay leaves
  • peanut oil, for deep-frying
Instructions:
  • Make a slit on top of each chicken piece and drizzle with lime juice.
  • In a large mortar and pestle, crush eschalot, garlic, ginger, turmeric, and salt flakes into a flavorful paste.
  • In a spacious wok, mix chicken, spices, bay leaves, and 2 tablespoons of water. Cook covered over medium heat for 20 minutes, stirring occasionally. Add more water if needed. Transfer the cooked mixture to a dish and clean the wok.
  • Preheat the oven to 150°C. Fill a wok halfway with oil and heat over medium heat until hot. Fry chicken in batches of 3 to 4 pieces for 7 minutes until crispy and golden. Transfer to a wire rack and keep warm in the oven. Serve warm or at room temperature.
