Iconic Southern shrimp and grits - creamy grits, saucy shrimp with onions, peppers, and bacon. Flavorful & easy homemade recipe.
Ingredients:
  • 4 1/2 cups water
  • 1 teaspoon kosher salt
  • 1 cup stone-ground white grits
  • 2 tablespoons unsalted butter
  • 2 ounces white cheddar cheese, shredded
  • 4 thick slices bacon
  • 1 cup chopped white or yellow onion
  • 1 cup chopped green pepper
  • 2 garlic cloves, minced
  • 1 to 1 1/2 pounds shrimp, peeled and deveined
  • 1 cup chicken stock
  • 3 green onions, chopped (white and light green parts only)
  • 2 tablespoons chopped parsley
  • Juice of 1 lemon, about 1-2 tablespoons
Instructions:
  • Fry the bacon in a large sauté pan over medium heat until crispy. Chop the cooked bacon, leaving 3 tablespoons of fat in the pan. Turn off the heat.
  • Prepare the grits by bringing water to a boil in a pot, then adding salt. Gradually stir in the grits to avoid lumps forming. Reduce heat to a simmer and cook for 35 minutes, stirring occasionally until creamy.
  • Prepare the shrimp: Keep about one-third of the shrimp whole and dice the remaining shrimp into 3 to 4 pieces each. Set aside.
  • Sauté the vegetables, bacon, and shrimp: Cook the onion and green pepper in hot bacon fat until soft, about 4 minutes. Add the bacon, garlic cloves, and shrimp, and cook for another minute to combine flavors.
  • Pour in the chicken stock and simmer until reduced for 5 minutes.
  • Stir in the cheddar cheese and butter into the grits until melted. Season with salt to taste, if desired.
  • To serve, dish out warm grits into individual bowls. Top with seasoned shrimp, green onions, parsley, lemon juice to taste, and a pinch of salt if desired. Ensure each plate has a whole shrimp.
