Savory shrimp and grits bites with flavorful Progresso® chicken broth - ideal for starters.
Ingredients:
  • 4 slices thick-sliced bacon
  • 3 1/2 cups Progresso™ chicken broth (from 32-oz carton)
  • 1 1/4 cups uncooked quick-cooking grits
  • 1/4 teaspoon salt
  • 1 cup grated Parmesan cheese
  • 3/4 lb uncooked medium shrimp, peeled, deveined and chopped
  • 1 tablespoon finely chopped garlic
  • 1 can (14.5 oz) diced tomatoes with basil, garlic and oregano, drained
  • 4 medium green onions, chopped (1/4 cup)
Instructions:
  • Cook bacon in a skillet until crisp; then drain on paper towels, crumble, and set aside. Save the drippings. Spray a 13x9-inch pan with cooking spray. In a saucepan, bring broth to boil. Gradually add grits and salt, then reduce heat to low. Cover and simmer for 5 to 7 minutes, stirring often, until thickened. Mix in cheese and bacon. Transfer to the pan, cover, and refrigerate for 1 hour or until firm.
  • Preheat oven to 450°F. Gently release the grits from the pan using a spatula onto a board. Cut out 30 rounds using a 1 3/4-inch round cutter. Arrange the rounds in a single layer on a large baking sheet. Bake for 20 minutes, then flip over and bake for another 10-12 minutes until golden and crispy.
  • In a skillet with bacon drippings, cook shrimp and garlic over medium heat for 3 to 4 minutes until shrimp turn pink. Add tomatoes, simmer for 1 minute, then cover and set aside to keep warm.
  • Spoon a generous amount of shrimp mixture over each grits cake and garnish with onions.
