Cheesy shrimp and grits with bacon: A delicious twist on a classic family favorite.
Ingredients:
  • 4 cups water
  • 1 cup stone-ground grits
  • 2 cups shredded sharp Cheddar cheese
  • 3 tablespoons butter
  • 1 pound shrimp, peeled and deveined
  • 6 slices bacon, chopped
  • 1 cup thinly sliced scallions
  • 2 tablespoons chopped fresh parsley
  • 1 large clove garlic, minced
  • 4 teaspoons lemon juice
Instructions:
  • In a large pot, bring water to a vigorous boil. Season with salt and pepper, then whisk in grits. Reduce heat to low and simmer until grits absorb water, about 20-25 minutes. Remove from heat and fold in Cheddar cheese and butter until melted. Cover and let sit.
  • After rinsing the shrimp, gently pat them dry to prepare for cooking.
  • Cook the bacon in a large skillet over medium-high heat, turning occasionally, until perfectly browned, for about 10 minutes. Transfer the cooked bacon to paper towels to drain.
  • Heat the reserved bacon grease in the skillet over medium heat. Sauté the shrimp until they are bright pink on the outside and opaque, which should take about 3 to 4 minutes. Next, add the bacon, scallions, parsley, garlic, and lemon juice, and continue cooking for an additional 3 minutes.
  • Transfer the creamy grits into a beautiful serving bowl, top with the flavorful shrimp mixture, and gently combine. Enjoy this delicious dish right away.
