Cheesy grits topped with shrimp and bacon, a Southern brunch favorite.
Ingredients:
  • 1.5 cups evaporated milk
  • 0.75 cup quick-cooking grits
  • 1 cup shredded Cheddar cheese
  • 1 cup chopped raw bacon
  • 2 tablespoons bacon drippings
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 0.5 cup diced green bell pepper
  • 0.5 cup diced onion
  • 1 tablespoon shredded Cheddar cheese, or as desired
Instructions:
  • In a large saucepan, combine chicken broth and evaporated milk and bring to a boil. Add grits and salt, bring back to a boil. Reduce heat, cover, and simmer while stirring frequently until thick, about 5 minutes. Melt in 1 cup of Cheddar cheese. Keep the grits warm and set aside.
  • In a large skillet over medium heat, crisp bacon by cooking and stirring for 8 to 10 minutes. Transfer bacon to a plate lined with paper towels using a slotted spoon. Keep 2 tablespoons of bacon drippings in the skillet.
  • Return the skillet to medium heat and cook the shrimp, bell pepper, and onion in the hot bacon drippings until the shrimp is bright pink, no longer translucent inside, and the bell pepper is tender, for about 5 to 8 minutes. Add the cooked bacon to the shrimp mixture.
  • Layer the creamy grits in a serving dish, generously top with the savory shrimp mixture, and sprinkle with a tablespoon of sharp Cheddar cheese for the perfect finishing touch.
