One-pot shrimp scampi with orzo, garlic, white wine, and lemon - a zesty Mediterranean dish that's quick and flavorful!
Ingredients:
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 1 pinch red pepper flakes
  • 0.5 teaspoon dried parsley
  • 0.5 pound uncooked medium shrimp, peeled and deveined
  • 1 tablespoon butter
  • 0.75 cup orzo
  • 0.5 cup finely diced onion
  • 1 large clove garlic, minced
  • 0.25 cup white wine
  • 1.25 cups low-sodium chicken broth
  • 0.5 teaspoon freshly ground black pepper
  • 0.5 cup frozen peas, defrosted
  • 0.5 tablespoon chopped fresh parsley
  • 2 lemon slices
Instructions:
  • In a small bowl, mix together olive oil, lemon zest, lemon juice, red pepper flakes, and dried parsley. Add shrimp and toss well to coat. Let marinate for 15 to 20 minutes.
  • In a pot over medium-high heat, melt butter and add olive oil. Add orzo and onion, stir to coat, and cook until onions are translucent and orzo is lightly toasted, about 4 to 5 minutes, stirring frequently. Add garlic and cook until fragrant, about 30 seconds.
  • Deglaze pot with white wine until cooked off. Add chicken broth, salt, and pepper. Cook until orzo is tender yet firm, about 8-10 minutes, stirring often. Add peas and shrimp with marinade, cover, and cook until shrimp turn light pink, about 3-4 minutes, stirring occasionally.
  • Split the mixture evenly between 2 serving dishes, gently scatter some fresh parsley over the top, and elegantly decorate each dish with slices of fresh lemon.
