Indulge in quick and flavorful shrimp scampi with penne pasta, tomatoes, and roasted asparagus, all cooked together for a speedy gourmet meal.
Ingredients:
  • 1 pound penne pasta
  • 0.5 cup butter
  • 1 tablespoon Dijon mustard
  • 1 tablespoon minced garlic, or more to taste
  • 1 tablespoon minced flat-leaf parsley, or more to taste
  • 0.5 lemon, juiced
  • 0.25 cup white wine, or more to taste
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 pint grape tomatoes, halved
  • 1 bunch fresh asparagus, trimmed
  • 2 tablespoons olive oil
  • 2 tablespoons freshly grated Parmesan cheese, or to taste
  • 1 teaspoon minced garlic
  • coarse kosher salt to taste
  • freshly ground black pepper to taste
  • crushed red pepper to taste
  • 0.25 cup grated Pecorino Romano cheese, or to taste
  • 0.25 cup shredded Italian cheese blend, or to taste
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • Boil a pot of lightly salted water. Add penne and cook until al dente, about 11 minutes. Drain pasta and return to pot.
  • Start by melting butter in a saucepan over gentle heat. Stir in Dijon mustard, 1 tablespoon of garlic, parsley, lemon juice, and white wine. Next, place shrimp and tomatoes in a small glass baking dish, then pour the butter sauce over them. Gently mix until the shrimp and tomatoes are thoroughly coated.
  • Toss asparagus with olive oil, Parmesan cheese, 1 teaspoon of garlic, salt, black pepper, and red pepper in another glass baking dish.
  • - Bake both baking dishes side by side in the oven until the shrimp is fully pink, approximately 15 minutes. - Pour the cooked shrimp, tomatoes, and butter over the penne pasta and stir gently to combine. - Sprinkle Pecorino Romano cheese and Italian blended cheese over the mixture and mix well. - Serve the asparagus over the pasta and enjoy your delicious meal!
