Delicious shrimp scampi with tomatoes, spinach, and pesto; perfect over rice with a side of hot Italian bread.
Ingredients:
  • 0.33333334326744 cup butter
  • 0.33333334326744 cup olive oil
  • 2 tablespoons prepared basil pesto (such as Classico ™)
  • 3 cloves garlic, minced
  • 2 large plum tomatoes, seeded and diced
  • 0.25 teaspoon red pepper flakes, or to taste
  • black pepper to taste
  • 1 pound large shrimp, peeled and deveined
  • 2 cups fresh spinach, rinsed and stemmed
Instructions:
  • In a large skillet over medium heat, melt the butter with the olive oil. Add pesto, garlic, and tomatoes, and cook until the tomatoes begin to soften, approximately 2 minutes. Season to taste with red pepper flakes and black pepper.
  • Mix the shrimp into the sauce and cook until pink, which should take around 3 to 5 minutes. Next, add the spinach and stir until it wilts, approximately 1 minute.
