Delicious garlic shrimp scampi with white wine, broth, mushrooms, and tomatoes over angel hair pasta.
Ingredients:
  • 1 (16 ounce) package angel hair pasta
  • 0.5 cup butter
  • 3 white mushrooms, sliced
  • 0.25 cup finely chopped onion
  • 0.25 cup chopped scallions
  • 0.5 cup dry white wine
  • 0.5 cup chicken broth
  • 0.5 (10 ounce) can stewed tomatoes
  • 2 tablespoons chopped fresh parsley
  • 1 pound large shrimp, peeled and deveined
  • 2 ounces all-purpose flour
  • 0.5 lemon
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • 1. Boil a big pot of lightly salted water. 2. Add angel hair pasta and cook until al dente, about 4 to 5 minutes, stirring occasionally. 3. Drain the pasta.
  • In a skillet over medium-high heat, melt butter until sizzling. Cook mushrooms, onion, scallions, and garlic until onions are translucent, around 5 minutes. Pour in wine, broth, tomatoes, and parsley. Let the sauce come to a boil, then lower the heat and simmer covered for 10 minutes.
  • Coat shrimp with flour by shaking in a resealable bag. Stir coated shrimp into the scampi and cook until opaque, around 5 minutes. Serve over pasta, squeeze fresh lemon juice, and season with salt and pepper.
