Lemony Garlic Shrimp with Pasta

Enhance shrimp scampi by brining for better flavor and texture.
Ingredients:
  • 0.75 cup kosher salt
  • 1 gallon cold water
  • 2 pounds peeled and deveined large shrimp (21 to 30 per pound)
  • 1 (16 ounce) package angel hair pasta
  • 0.25 cup unsalted butter
  • 0.25 cup olive oil
  • 3 tablespoons minced garlic
  • 0.33333334326744 cup white wine
  • 0.25 cup lemon juice
  • 0.5 teaspoon crushed red pepper flakes
  • 1 teaspoon freshly ground black pepper
  • 0.5 cup chopped fresh parsley
  • 1 tablespoon lemon zest
Instructions:
  • In a large pot, dissolve kosher salt in 1 gallon of water. Add shrimp, then refrigerate for 2 to 4 hours. Drain and pat dry with paper towels before using.
  • Bring a large pot of salted water to a rolling boil. Add angel hair pasta and cook until al dente, about 4 to 5 minutes. Drain in a colander in the sink.
  • In a large skillet over medium-low heat, melt butter and olive oil. Add garlic and cook until softened, about 3 to 4 minutes. Add shrimp, white wine, lemon juice, and red pepper flakes. Cook until shrimp is no longer translucent in the center, about 6 minutes. Finish by stirring in black pepper, parsley, and lemon zest before tossing with angel hair pasta.
