Zesty lemon-garlic dressing elevates shrimp pasta salad with olives, tomatoes, and green onions.
Ingredients:
  • 1 pound tri-color pasta
  • 1 pound cooked and peeled medium shrimp
  • 1 pint cherry tomatoes, halved
  • 0.5 cup sliced pitted green olives
  • 3 green onions, sliced
  • 1 cup lemon juice
  • 0.5 cup extra-virgin olive oil
  • 1 clove garlic, minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
Instructions:
  • 1. Boil a large pot of lightly salted water. Add elbow macaroni and cook until al dente, about 8 minutes. Drain and rinse.
  • Combine the macaroni, shrimp, tomatoes, olives, and green onions in a spacious bowl.
  • In a separate bowl or mixing glass, whisk together lemon juice, oil, garlic, salt, and pepper to create a flavorful dressing. Drizzle the dressing over the salad and chill in the refrigerator for a minimum of 4 hours.
