Refreshing seafood pasta salad with celery, onion, green pepper, and choice of crabmeat or salmon/tuna.
Ingredients:
  • 5 large eggs
  • 3 cups uncooked elbow macaroni
  • 0.5 pound fresh shrimp, peeled and deveined
  • 0.5 pound crabmeat
  • 2 strips celery, diced
  • 0.5 onion, minced
  • 0.5 green bell pepper, diced
  • 1 cup mayonnaise
  • 0.5 cup milk
  • 2 teaspoons cocktail sauce
  • 1 teaspoon dried dill weed
  • 1 teaspoon chopped fresh mint
  • 0.5 teaspoon white sugar
  • 0.125 teaspoon hot pepper sauce
  • 2 teaspoons paprika, or as desired
Instructions:
  • For the salad, boil eggs in water until cooked to perfection. Then, cool, peel, and slice 1 egg for garnish; chop the other 4 eggs.
  • Bring a large pot of salted water to a boil. Cook elbow macaroni until al dente, about 8 minutes. Drain.
  • Mix together succulent shrimp, flavorful crab, al dente macaroni, chopped eggs, crisp celery, fragrant onion, and vibrant bell pepper in a spacious bowl.
  • Prepare the dressing by whisking mayonnaise, milk, cocktail sauce, dill, mint, salt, sugar, and hot pepper sauce in a medium bowl until fully combined.
  • Drizzle dressing over macaroni mixture and toss to coat well. Sprinkle with paprika and top with egg slices. Cover the bowl with plastic wrap and refrigerate for 4 to 6 hours.
