Delicious shrimp and crab pasta salad with imitation crab meat and mini shrimp for an easy crowd-pleaser.
Ingredients:
  • 1 (16 ounce) package uncooked tri-colored spiral pasta
  • 0.5 cup mayonnaise, or more to taste
  • 0.25 cup apple cider vinegar
  • 0.25 cup olive oil
  • salt and pepper to taste
  • 1 (8 ounce) package imitation crabmeat, flaked
  • 1 (6.5 ounce) can tiny shrimp, drained
  • 1 pint grape tomatoes, halved
  • 1 English cucumber, diced
  • 1 (4 ounce) can sliced black olives, drained
  • 1 red bell pepper, seeded and chopped
Instructions:
  • Bring a large pot of salted water to a boil and cook the pasta until tender, around 10 minutes. Drain, rinse with cold water, transfer to a bowl, and set aside.
  • In a small bowl, combine mayonnaise, vinegar, oil, salt, and pepper. Drizzle the mixture over the pasta and toss to coat evenly.
  • Combine crab, shrimp, juicy tomatoes, crunchy cucumber, savory black olives, and vibrant bell pepper in a bowl. Gently toss with dressing to evenly coat. Taste and season to your liking. If the pasta seems dry, stir in extra mayonnaise.
