Delicious seafood enchiladas with Jack cheese, bursting with Southwestern flavors.
Ingredients:
  • 12 (12 inch) flour tortillas
  • 8 ounces Monterey Jack cheese, shredded
  • 1 (6 ounce) can crab meat, drained
  • 1 pound cooked medium shrimp, shelled and deveined
  • 1 (20 ounce) can green enchilada sauce
  • 1 (8 ounce) container sour cream
  • 1 bunch green onions, chopped
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Place tortillas on a flat surface. Fill each with cheese, crab, and shrimp. Remember to set aside some cheese for topping. Roll up tortillas to make enchiladas and line them up in a 9x13 inch baking pan.
  • Cover all the enchiladas completely with green enchilada sauce, then sprinkle the remaining cheese over the top.
  • Bake covered for 30 minutes in a preheated oven. Uncover and bake for an additional 15 minutes. Serve enchiladas topped with sour cream and green onions.
